About Us

Domenico Spanò, immersed in the Umbrian olive-growing culture for over 20 years, has equally benefited from a long-standing friendship with Dr. Giorgio Pannelli, with whom he continuously updates his knowledge in the olive and oil field. Carefully and dedicatedly, he cultivates olive groves of Moraiolo, Leccino and Frantoio varieties around the city of Spoleto, set in a captivating and charming scenery.

Domenico also has an olive grove in Calabria, gifted by his parents, to which he intends to provide continuity, respecting the sacrifices of his previous generations. The olive grove is located in the heart of Calabria, with centuries-old Carolea and Coratina trees, set in a unique agronomic and environmental scenario.

Recently, with the ongoing support of Dr. Pannelli and still near Spoleto, he decided to plant a new olive grove with the Tuscan variety Leccio del Corno, indicated to be compatible also with the Umbrian territory, thus capable of good productivity and high oil quality.

The intention is to grow the company by overseeing the entire agronomic and technological chain, in order to offer consumers a product without any form of intermediation. In any case, the oil will carry the best analytical and sensory characteristics (certified as organic, see our certifications section), but also the passion and expertise of the producer of "Olio Spanò".

How we work

Olio Spanò is an Organic Extra Virgin, 100% ITALIAN artisan product, the result of Domenico Spanò's passion and expertise gained from years of field experience, who personally takes care of and controls every phase of the production chain, from the olive grove, to the mill, to the packaging.

The olives are mechanically harvested from the tree when they are healthy and at the right stage of ripeness, that is, with just a hint of veraison.

The olives harvested on the same day are transported to the mill for immediate milling, with the intention of preserving the nutritional, health, and sensory virtues of the oil, as they are found in the fresh fruit.

The oil is extracted by continuous centrifugation at a temperature constantly below 24-25 °C, and immediately filtered to free the oil from the pulp sediments and the micro particles of water, which after a few hours activate an instantaneous process of oil deterioration, to then be stored in hermetically sealed stainless steel tanks, away from sources of light and heat and in the absence of air, at a constant temperature of about 15° C., packaged only at the time of the order.
